Instant Pot Buffalo Chicken Dip

If you are a fan of Buffalo Chicken Dip, this is how you'll make it from here on out! It's super easy to make with the help of the Instant Pot!

For some reason, I keep getting asked to bring Buffalo Chicken Dip to our family functions. I don't mind as it's super simple to make and I can make another appetizer or dessert as the chicken is cooking in the Instant Pot! Once the chicken is shredded and the cream cheese has melted, I put the lid back on and take with us, plug it in and keep it warm for the guests to serve themselves!

Ingredients Needed to Make Buffalo Chicken Dip in the Instant Pot

  • chicken breasts
  • cream cheese - you want the cream cheese to be softened/room temperature so that it melts easily and smoothly.
  • ranch packet
  • hot sauce

Variations to Buffalo Chicken Dip

There's several variations to buffalo chicken dip. However, the recipe below is our favorite version.

  • add blue cheese crumbles if you're a fan of blue cheese
  • instead of the ranch packet, add in a cup or two of your favorite ranch, or a homemade ranch (I'll have a recipe for you soon!)
  • Serve with celery or carrot sticks to keep keto/low carb

How To Make Instant Pot Buffalo Chicken Dip

To your instant pot, add a cup of either water or chicken broth. The chicken broth will obviously add flavor!

Next, add in your chicken breasts. Place the lid and ensure the vent is set to SEAL. Set to cook for 15 Minutes. If you have the POULTRY/MEAT/STEW function you can select that. Once the chicken has cooked, do a quick-release on your valve until all the pressure has been released.

Shred the chicken carefully with forks. You can also use a hand mixer to shred the chicken, this works wonderfully!

Once the chicken has been shredded, add in the cream cheese, hot sauce and ranch packet. I typically put the lid back on and set the Instant Pot to warm to help melt the cream cheese. Mix until the cream cheese has fully melted and the ranch and hot sauce are fully incorporated.

Using Leftover Buffalo Chicken Dip

I should've been born into an Italian family, because I tend to often have leftovers. If this is the case, use leftover chicken dip in tacos or on top of a baked potato topped with cheese and bacon...trust me, it's fkn delicious!
