Keto Chili in the Instant Pot

For the last 10(ish) years, I've been living a keto/low carb lifestyle. I'll make a post later this week on my journey, but, for now I wanted to share with you my chili recipe. This is the chili recipe that I make all the time, it's loaded with flavor and super delicious. 

I personally think that it's better reheated the next day. Well, I think all chili is much better the next day! Anyhow, I can't wait for you to try this recipe and I hope that you enjoy it as much as we do!

Yes! This instant pot chili recipe is perfect for those on a low carb or keto diet. This is one recipe I've eaten over my years and have kept the weight off!

Ingredients Needed for Chili

  • 1 LB 90/10 ground hamburger
  • 1 small onion diced
  • 10 oz rotel tomatoes
  • 28 oz crushed tomatoes or diced
  • 1 tbsp ground cumin
  • 2 tbsp chili powder
  • 1 tbsp curry powder
  • 28 oz beef broth
  • 6 oz tomato paste (optional)

    How to Make Marci's Instant Pot Keto Chili Recipe

    Turn the Instant Pot on to Saute mode. Add in hamburger and onion, cooking through. Using a mix n chop (shown above) or a wooden spoon, break up the hamburger as fine as you like it.


    Add the tomatoes, cumin, chili powder, curry powder and beef broth to the Instant Pot.


    Without stirring, add the lid to the Instant Pot, ensuring the valve is set to the SEALING MODE.


    Turn the Instant Pot on by hitting the CHILI/BEAN BUTTON and adjusting the time to set to 12 minutes. Allow the Instant Pot to cook and release naturally. Once there is no more steam you can set the valve to release.

    If the chili isn't as thick as you'd like, add in the tomato paste and stir to ensure the tomato paste breaks down and heats through.

    Top with your favorite chili ingredients. I do sour cream and a handful of cheese to keep it keto. For the kids (and because we live in Cincinnati) I'll make spaghetti noodles and they eat it that way!

    • Slow cooker option: If you don't have an Instant Pot, this chili can easily be made in a slow cooker. Simply brown the meat on the stovetop and then add it along with all other ingredients to your slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours.
