Now you may be asking yourself “How in the hell does she make all that?”…I literally dump the steak on a sheet pan and pop it into the oven while I’m working the rice and the corn on the stove.
I will admit, there’s quite a bit to clean up afterwards, but the rule in my house is, if I make it, I don’t clean it up. Somehow, I still manage to move dishes from the sink to the dishwasher and hand wash what is needed, but, at this point, I’ll take any help I can get. Single. Mom. Life.
what kind of rice is best for cilantro lime rice?
You can use any variety that you have on hand. Brown rice, long grain white rice and basmati rice are what is typically used. If you only have boxed white rice, you can use that as well as that’s what I typically have on hand.

how to make cilantro lime rice
Step 1 – Cook the rice. I do 3 cups of water and bring to a boil. Then add 3 cups of white rice, remove from the heat and cover. Allow the rice to absorb the water for 10-15 minutes and then fluff with a fork.
Step 2 – Zest & Juice the limes! Next, zest two limes with a zester. Once you see the “white” part of the lime, rotate and zest a new spot. Repeat until the lime has been completely zested. Cut the limes in half and add the lime juice to the rice.
Step 3 – Cilantro! Add the freshly chopped cilantro to the rice and stir until completely combined. If the rice is a little dry, you can add a tablespoon or olive oil.
