Ingredients Needed

  • 2 sticks salted butter
  • 3/4 c granulated sugar
  • 3/4 c light brown sugar
  • 1 egg + 1 egg yolk
  • 1 1/2 tsp cornstarch
  • 1 tsp baking soda
  • pinch of salt
  • 2 1/4 c flour
  • 2 c semi sweet chocolate chips

 

How To Make Marci's Chocolate Chip Cookies

In a large bowl, melt the butter in the microwave in :30 second increments. 

Next, add in the granulated and light brown sugar. Using a hand mixer, beat until smooth and combined. The butter will soak into the sugar and should be light and fluffy.

Next, add in the egg, egg yolk and vanilla extract. Stir to combine. 

Add in the cornstarch, baking soda and pinch of salt. Stir until combined. Scrape down the side of the bowl and add in the flour. With your hand mixer on low speed, incorporate the flour until just combined.

Add in the chocolate chips and stir. 

To a baking sheet, line it with parchment paper. Using a cookie scoop, place the dough about 1"-1 1/2" apart. Bake for 8-10 minutes until the center has just set.

Allow to cool on the baking sheet for 2-3 minutes before moving to a cooling rack. The cookie is a super soft cookie and will either break apart of deform in shape if you move too soon.

How to Freeze Homemade Chocolate Chip Cookies

To freeze chocolate chip cookies, first make sure they have cooled completely. Then, arrange them in a single layer on a baking sheet and place the sheet in the freezer for about an hour, or until the cookies are firm.

Once frozen, transfer the cookies to a freezer-safe container or zip-top bag, placing parchment paper between layers to prevent sticking. Store them in the freezer for up to three months.

When ready to enjoy, thaw the cookies at room temperature or reheat them in the microwave for a few seconds.
