Let me just say, I make these Air Fryer Roasted Potatoes more times than I probably should in a month! They are super easy to put together, packed full of yumminess, crisp on the outside and soft on the inside.

The girls and I love this recipe. Not to mention, a few friends do too! I use to make these roasted potatoes in the oven, wrapped in aluminum foil, but, this air fryer version is so much better, in my opinion.

is it necessary to boil potatoes before roasting?

No! There’s no need, the potatoes are super crispy on the outside and tender on the inside!

why do people soak potatoes in water before roasting?

Some folks soak potatoes in water to remove some of the starch from the potato. This helps to make the potatoes crispier. If you are making homemade french fries, then yes, I would definitely recommend soaking potatoes in water before hand!

Can I use any type of potato for roasting?

Yes, you can use any variety of potatoes, but Yukon Golds and Russet potatoes are popular choices for their crispy texture and flavor. Waxy potatoes like Red potatoes work well too but may not get as crispy.

Do I need to peel the potatoes before roasting?

Step 1 – Wash and dice your potatoes. I start by quartering the potato lengthwise.  Then, I stack two halves on top of one another and cut those in half, then dice!

Step 2 – Dice the onion.

Step 3 – Toss the ingredients together in the air fryer. Make sure to coat the potatoes really well with olive oil. I would say I use about 3-4 tablespoons of olive oil and 4-5 tablespoons of garlic salt.

Step 4 – Roast the Potatoes: 

Air Fryer Method:

Prepare the Potatoes
Start by washing and quartering the potatoes. Dice the onion into small pieces.

Season the Potatoes
Place the quartered potatoes and diced onion in a large bowl. Drizzle with olive oil, then sprinkle with garlic salt and minced garlic (if using). Toss the mixture until the potatoes are evenly coated.

Air Fry the Potatoes
Preheat your air fryer to 375°F (190°C). Add the seasoned potatoes to the air fryer basket in a single layer. Air fry for 15-18 minutes, shaking the basket halfway through to ensure even cooking.

Check for Doneness
Once the potatoes are golden and crispy, check for tenderness by piercing them with a fork. If they’re not quite done, air fry for a few more minutes.

Serve & Enjoy
Once your easy roasted potatoes are crispy and perfectly cooked, serve them hot as a side dish with your favorite main course!

Oven Method:

  1. Preheat the Oven
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare the Potatoes
    Just like the air fryer method, wash and quarter the potatoes. Dice the onion and add it to the potatoes.

  3. Season the Potatoes
    In a large bowl, toss the potatoes and onions with olive oil, garlic salt, and optional minced garlic. Make sure everything is evenly coated.

  4. Roast in the Oven
    Spread the seasoned potatoes and onions evenly on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through to ensure the potatoes cook evenly on all sides.

  5. Check for Doneness
    The potatoes should be golden brown and crispy on the outside and tender on the inside. If necessary, roast for an additional 5 minutes to achieve the perfect crispiness.

  6. Serve & Enjoy
